The bar’s signature cocktails have been developed and perfected by Head Bartender Janis Muzikants. Janis and his team offer a personalised and bespoke experience, recommending the perfect cocktail for each guest after discussing their personal tastes and flavour profile.

The bar at Restaurant 1890 is adorned in viewing cabinets featuring memorabilia from across the history of the hotel, including a copy of the 1930 edition of the infamous The Savoy Cocktail Book. “The Savoy’s legacy is our muse, but we strive to infuse it with a modern twist,” says Janis. “We want our guests to discover the unexpected—something familiar, yet refreshingly new — creating an experience they’ll cherish long after their visit.”
The signature cocktail menu includes favourites such as the citrussy and refreshing ‘AIX’, which transports guests to the south of France, featuring a mixture of liquors from the region. The ‘Queen of Divas Negroni’ reinvents the classic with a sweet, fruity twist, while the ‘Escoffier Holy Trinity Old Fashion’ pays homage to the legendary chef Georges Auguste Escoffier, who shaped the hotel’s culinary history in the late 19th century.

For those who wish to delve deeper into the art of mixology and unlock the secrets of the shaker, Restaurant 1890 offers an immersive cocktail masterclass. Under Janis’ expert guidance, participants learn the secrets of blending flavours, the importance of ice, selecting the best glassware and equipment, and of course get into the action of crafting two cocktails themselves.
Bookable for up to eight guests, the class can be tailored to those beginning their love affair with cocktails through to cocktail aficionados. Priced at £150 for two, the masterclass makes a perfect gift for any occasion from Christmas to celebrating an anniversary.
